Spot Shrimp Pizza With White Sauce

We often prepare pizza for guests and staff. We cook the pizza in the oven as in this recipe or throw it onto the grill on the deck. If you don’t have a grill, we find a stovetop cast-iron grill pan handy for grilling small items like lemon slices.

Spot Shrimp Pizza With White Sauce

Ingredients
Pizza Dough
  • 2 cups bread flour, divided
  • 2.1/2 teaspoons active dry yeast
  • 2 teaspoons granulated sugar
  • ¾ teaspoon salt
  • ⅔ cup warm water
  • 1 tablespoon pure olive oil
  • 2 Tablespoons rye flour
Toppings
  • Coarse cornmeal, for dusting
  • 1 tablespoon unsalted butter
  • 1 tablespoon bread flour
  • ¾ cup whole milk
  • 2 cloves garlic, peeled and minced
  • ½ cup grated gruyere cheese
  • Salt and freshly ground black pepper
  • 1 tablespoon pure olive oil
  • 1½ pounds spot shrimp, peeled
  • 1 pound pizza dough
Instructions
Pizza Dough
  1. In a stand mixer with the dough hook attachment, combine 1 cup of the bread flour with the yeast, sugar, and salt. With the mixer on low, add in the warm water and the oil.
  2. Slowly add in an additional ½ cup of the bread flour and the rye flour until the dough because smooth. Knead with the mixer on medium-low for about 4 to 5 minutes.
  3. Turn the mixer off and turn the dough out onto a lightly floured work surface. Add any remaining bread flour to the dough as necessary to prevent the dough from being too sticky and finish kneading it by hand. Let the dough rest at room temperature for about 15 minutes, covered. It is ready to use or can be placed covered for up to 3 days in the refrigerator.
  4. Make 1 pound pizza dough.
Toppings
  1. Preheat the oven to 475°F. Line a 13-by18-inch baking sheet with parchment paper. Sprinkle the parchment paper with cornmeal.
  2. Melt the butter in a small saucepan. Add in the flour and whisk for 1 minute. Slowly whisk in the milk and garlic. Continue to cook over medium heat until the mixture is thickened. Add in the Gruyere, mixing over low heat until the sauce is smooth. Season to taste with the salt and pepper.
  3. Heat the oil in a large saute pan. Season the shrimp with salt and pepper. Sear over high heat until the shrimp are cooked halfway through. Set aside.
  4. Place the dough onto the prepared baking sheet. Stretch the dough out and press it toward the edges of the baking sheet. Pinch around the edges to make them slightly thicker than the rest of the crust.
  5. Spread the white sauce onto the pizza. Add the shrimp and lemon slices evenly onto the sauce.
  6. Bake the pizza for 10 to 15 minutes until golden brown. Remove from the oven and sprinkle with the arugula.
  7. Makes 1 (12-inch) pizza.
